Lean, hearty, and full of old-fashioned beef flavor — our Pikes Peak Roast (also known as the heel of round) rewards patience with tenderness. Braised low and slow, it transforms into rich, pull-apart perfection ideal for roasts, shredded tacos, or sandwiches piled high.
Raised on our pastures with no antibiotics or added growth hormones, each roast is hand-trimmed and dry-aged for 28 days to develop depth and flavor that grocery beef can’t touch.
