Heritage Breeds are slow growth, retain their genetic diversity and perform natural cycles of mating and seasonal breeding. Our animals have not been developed for commercial purposes.
Slow Growth allows the meat to fully develop its taste profile.
The intramuscular fat quality is richer and has better melting characteristics when cooking, providing an unsurpassed eating experience

Dry Aged Beef
More than grass fed and finished.
Our cows enjoy roaming through regenerative pastures that have been sown with a range of native Texan grasses, legumes, clovers, sorghum and more.
This range of forage combined a 2 to 3 year slow growth cycle creates a beefy rich depth of flavor that can only be experienced with Ancestral Food.
To fully develop this flavor profile we hang and dry age our beef for 28 days before carefully portioning into perfect cuts
