• What make Bresse chicken different from any other chicken?
• Bresse chickens metabolize their feed in a similar manner to a wagyu cow - the fat is distributed through their muscle giving its signature flavor and juiciness.
• What makes Bresse chicken a more nutricious choice?
• They are a true purebred heritage bird that spends 19 weeks foraging and growing naturally. Pasture raised chicken is harvested while they are still just 7 weeks old and cheeping like baby chicks. The natural growth of the Bresse results in better omega 3 and 6 ratios. In addition Bresse chicken is an adult at harvest allowing the taste profile to be fully developed
• What makes your pork different from other farms?
• We are the only farm to manage their feed in a way that encourages natural foraging activity. What supplemental feed they do get is long fermented. This means you taste pork that is in its most original ancestral state possible.
• Are all your products corn and soy free?
• Yes there is no corn or soy fed to any of our animals.
• What difference does fermenting the animal feed have on the meat?
• Fermenting the animal feed improves the flavor and tenderness of the meat. We have also lab tested our chicken and it carries 4 x the amount of omega 9 than standard pasture raised chicken. Omega 9 is anti-inflammatory. The animals build healthier immune systems which negates the need for vaccines and antibiotics and as a result provides meat in its most nutritious form.
• What is salad bar beef?
• Beef that is not just raised on grass but on a purposefully managed 'salad bar' of Texas plants, broadleaves and grasses. This provides the cows an ancestral grazing experience that you can taste!
• Why is your food suitable for AIP or other autoimmune related diets?
• Ancestral Food is uncontaminated whole food in its most nutritious form. There is no ingredient used in any step of our food production that is not a whole food. That means zero preservatives, fillers, chemicals, nitrates, vaccines, antibiotics or hormones.
